Mango cranberry mahi mahi

I made up this recipe tonight and it was delish...simple and easy.

I used frozen mahi- mahi, from Trader Joe's. About 1 inch thick. I put them in the micro for 30 second, just to slightly thaw.
Saute a little garlic in a bit of butter.
Get the pan good and hot and throw the fish in,( love to hear that sizzle.) with a few thinly sliced onions. Sprinkle on fish, lots of course ground pepper  and a little sea salt.
I like to use a well seasoned cast iron pan that holds heat.
get it good and browned on both sides.
Then spoon some prepared spicy mango sauce(recipe below) on top of the fish.And throw on a handful of chopped pecans.  Turn the burner off.
place the lid on.... and make sure you have the rice cooker going with some healthy brown rice.

Draw some bath water and go soak in the tub for about 20 minutes.
When you get out you will have a yummy, healthy, gourmet meal waiting for you.
Now what could be better then that?. ..


Mango sauce recipe i promised.....
frozen mangos
a little homemade orange peach marmalade
dried cranberries
dash of red pepper,
heat in micro a little so jam gets thin and mix.

btw..the best  frying pan is a cast iron from William Sonoma. They have a smooth finish and are already seasoned. Also come in many colors.
